Bublanina (Czech bubble cake with cherries)

Quick and easy sheet cake with semi - coarse flour and fruit of your choice.
Serves 12

Ingredients
BATTER
DRY BOWL
- 300 g Polohrubá mouka (semi-coarse flour)
- 12g baking powder (1 slightly rounded tbsp)
WET BOWL
3 eggs
140 g milk
170 g sugar
95 g vegetable oil
Zest of 1 orange or 1/2 grapefruit
1 tsp vanilla extract
ADDITIONAL
TOPPING
3 cups fresh cherries (pitted)
OPTIONAL
- 2 tbsp icing sugar
Directions
TOPPING
- Strain pitted fresh cherries
BATTER
- Whisk together dry ingredients in "Dry bowl"
- Whisk together wet ingredients in "Wet bowl" until sugar is mostly dissolved
- Add "Dry bowl" to "Wet bowl", and whisk until just combined
- Transfer the batter onto a lined or oiled baking tray and spread evenly (we use the baking tray that comes with the oven 40(h) x 420(w) x 475(d) mm)
- Scatter or arrange strained cherries evenly across the batter
BAKING & SERVING
Bake at 180 C / 350 F (preheated), for 20 - 25 minutes or till just lightly golden brown on the edges
When using a smaller sheet pan (9 x 13 inches (23x33 cm), bake at 170 C / 340 F (preheated), for 30 - 35 minutes
Allow to cool before dusting with icing sugar or serving
Cut into servings and enjoy with whipped cream, ice cream or enjoy it on its own
